Answer
Operating model, infrastructure, backups, monitoring, support and data export are agreed per project. Depending on the product status and project, cloud, separate or other operating models may be considered; the website alone does not establish any availability or on-premises commitment. It is important that responsibilities for the application, database, third-party services and recovery are clearly separated.
For a possible exit, the scope and format of the export must be described: master data, orders, files, relationships and, where applicable, logs. Source code and licence rights are separate contractual questions. Sensible protection against unclear dependency does not lie in sweeping promises, but in documented access, regular export options and an agreed handover. Specific guarantees belong in the operating contract.
